Chocolate Avocado Mousse

Who doesn’t love chocolate and healthy in the same sentence? This Dark Chocolate Avocado Mousse (nice cream) recipe is a little piece of heaven, and it’s vegan!  However most mousse or ice cream is made with milk, which means cows are involved.  I don’t know about you but with all the hormones raging in cows, I try to steer clear (no pun intended! HA!) of rBST in processed milk products.  So for this recipe I used coconut oil. You can eat it chilled out of the fridge or freeze if you want more of an ice cream texture. I don’t usually like to wait that long so mousse it is.
Coconut oil has a host of amazing benefits including hair care, skin care, stress relief, maintaining cholesterol levels, weight loss, increased immunity, proper digestion and metabolism, kidneys, heart diseases, high blood pressure, diabetes, HIV and cancer, dental care, and bone strength to name a few.
Avocados are definitely a good source of fiber, potassium, and vitamins A, C, E, K, folate and B6, along with a ton of potassium and “healthy” fats.. Half an avocado has 160 calories, 15 grams of heart-healthy unsaturated fat, and only 2 grams saturated fat. One avocado has more than one-third daily value of vitamin C, and more than half the day’s requirements of vitamin K. An avocado a day may keep the doctor away!

Did you know that by adding avocado to other fat burning foods, you can improve your absorption of nutrients? Avocados can also reduce the signs of aging, regulate blood sugar and improve eye health.  Most people love avocados or at least guacamole! Ole!

How many times have you gone to make guacamole only to find a very questionable avocado waiting for you? Here is a very simple way to decide if that softy is edible or not.

Remove the stem. If it’s brown, it’s to ripe. If it’s green, it’s just right!

Cacao Powder (raw chocolate) is a mayan superfood and loaded with iron, antioxidants, magnesium and is raw fiber. Just make sure you get organic and raw. Navitas Natural is my favorite.
I’ve used agave nectar to sweeten as it is low glycemic, though a little maple is natural and gives it a wonderful flavor. Maple can be omitted for a diabetic friendly version.

And here’s another variation using dates as thickener and sweetener.

This is a healthy way for kids and adults alike to enjoy a dessert treat and not feel guilty!

    I just made it again myself, this time added dried coconut for texture, my kids love it! Good fat for their brain to make smart kiddies!
